Mini pannenkoeken (Mini Pancakes)
Soft mini pancakes made with banana, cinnamon and egg, served with apple and fat-free Greek yoghurt. Ideal as a dessert in any season.
Instructions
- Blend the flour, baking powder, cinnamon, banana and egg in a blender or food processor until smooth. Add a splash of milk if the consistency is too thick.
- Heat oil in the pan and spoon 1 tablespoon of batter into the pan to create mini pancakes.
- Cook each side for 2 to 3 minutes until the pancakes are cooked through.
- Wash the apple and cut it into cubes.
- Serve the pancakes with the diced apple and yogurt.
