Rødgrød med fedtfattig skyr (Red Berry Pudding with Low-Fat Skyr)
A light and fruity dessert made with mixed berries and topped with low-fat skyr. Ideal for autumn and summer.
Instructions
- Wash the berries, remove stems and hulls, and cut the strawberries and raspberries into smaller pieces. Transfer the berries, water and vanilla extract into a saucepan. Mix well and let the berries soak in the water with honey for about 1 hour.
- Bring the berry and water mixture to a boil in the saucepan over medium heat. Let the mixture simmer for about 8 minutes until the fruit softens.
- In a small bowl, dissolve the potato flour in cold water. Lower the heat and stir the starch mixture into the berries. Simmer for about 3 minutes to thicken, but avoid letting the mixture boil.
- Pour the berry pudding into dishes and let it cool completely. Serve the cold rødgrød topped with low-fat skyr for a low-fat, high-protein dessert.
