Spiegelei mit Rahmspinat (Fried Egg with Creamy Spinach)
A comforting and simple dish made with boiled potatoes, creamy spinach and fried eggs. Ideal for lunch or dinner during the colder months.
Instructions
- Wash the potatoes, peel and cut them into cubes. Bring to a boil in a saucepan covered with salted water and cook over medium heat for about 20 minutes. Drain well.
- Wash the spinach and let it drain. Peel and finely dice the onion.
- Heat the butter in a saucepan over high heat and fry the onion for about 2 minutes. Add the spinach and let it wilt for about 1 minute. Deglaze with white wine and add the milk. Simmer over medium heat for about 3 minutes. Season the spinach with salt, pepper and nutmeg, then puree finely.
- Heat the oil in a frying pan over high heat. Crack the eggs into the pan and fry for about 4 minutes until ready. Season with salt and pepper.
- Arrange the boiled potatoes together with the creamed spinach and fried eggs on plates and serve.
