Spiegelei mit Rahmspinat (Fried Egg with Creamy Spinach)

A comforting and simple dish made with boiled potatoes, creamy spinach and fried eggs. Ideal for lunch or dinner during the colder months.

Instructions

  1. Wash the potatoes, peel and cut them into cubes. Bring to a boil in a saucepan covered with salted water and cook over medium heat for about 20 minutes. Drain well.
  2. Wash the spinach and let it drain. Peel and finely dice the onion.
  3. Heat the butter in a saucepan over high heat and fry the onion for about 2 minutes. Add the spinach and let it wilt for about 1 minute. Deglaze with white wine and add the milk. Simmer over medium heat for about 3 minutes. Season the spinach with salt, pepper and nutmeg, then puree finely.
  4. Heat the oil in a frying pan over high heat. Crack the eggs into the pan and fry for about 4 minutes until ready. Season with salt and pepper.
  5. Arrange the boiled potatoes together with the creamed spinach and fried eggs on plates and serve.
